In this seminar, Ecuadorian chef, academic, and researcher Esteban Tapia Merino will share his experiences in gastronomy, sustainable tourism, and food sovereignty with students. Merino will also engage with students on his work with traditional agriculture and biodiversity projects carried out in collaboration with local communities, as well as his efforts to preserve the gastronomic heritage of Latin America.
As part of the event, Merino will give a live cooking demonstration featuring authentic recipes from Latin American cuisine.
The seminar is open to the public and will be broadcast live on YouTube.
