Project Summary | A geographical indication is a quality mark that indicates and guarantees the origin of a product for consumers, as well as the connection between the product’s characteristic features and its geographical area or region. Geographical indication ensures the sustainability of the naturalness and quality of products produced in a specific region. Additionally, products that earn geographical indication certification contribute to regional and rural development by supporting the growth of economic activities. In addition to the historical and natural beauty of the Cappadocia region, its culinary culture also attracts curiosity. Traditional testi kebabı, prepared in food and beverage establishments in the Avanos district, known for its pottery, is particularly favored by local and foreign tourists visiting Cappadocia. To reflect the pottery culture of the Cappadocia region and attract tourists’ interest, the sustainability of Nevşehir testi kebabı must be ensured. In line with this information, obtaining a geographical indication for testi kebabı will ensure its preservation as a gastronomic heritage without losing its value. This study will conduct observations and interviews during the preparation of Nevşehir testi kebabı to develop its standard recipe. Records will be kept, and surveys will be conducted as needed to prepare the geographical indication application for the product. |
